Preheat the oven to 180°C/ 160°C (fan)/ 400°F/ Gas 6
Boil a kettle
Add the red wine vinegar, 1 tbsp [2 tbsp] sugar and 2 tbsp [4 tbsp] boiled water to a bowl
Slice 1/4 [1/2] of 1 red onion as thinly as you can
Add the sliced red onion to the bowl and set aside

Drain and rinse the black beans
Heat a pan over a medium-high heat with a drizzle of vegetable oil and the smoked paprika
Cook for 10-20 sec or until fragrant
Add the black beans, soy sauce and 150ml [300ml] boiled water and season with salt and pepper
Cover and cook for 10 min or until the beans are very soft

Meanwhile, finely dice the remaining red onion
Finely chop (or grate) the garlic
Zest (try to grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as this is very bitter!) and juice the lime[s]
Core and slice the apple[s] into matchsticks

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil
Once hot, add the diced onion with a pinch of salt
Cook over a medium heat for 3-4 min or until softened
Add the chipotle paste, chopped garlic and pork mince
Season generously with salt and pepper and cook for 5-7 min or until crispy

Meanwhile, combine the apple matchsticks, lime juice and zest with the mayonnaise and set aside – this is your apple slaw

Add the tortillas to a baking tray
Put them in the oven for 2-3 min or until warmed through

Once softened, add a very large knob of butter (as much as you dare!) to the black beans and mash them to a coarse paste – these are your re-fried beans
Drain the pickled onions and discard the vinegar
